Description

Milkshakes aren’t the only use for malted chocolate! A small amount of malted milk powder is incorporated directly into the batter of these Malted Chocolate Brownies. In my opinion, it adds a subtly toasted, roasty flavor that gently balances the sweetness and richness of the chocolate. Essentially, it’s a brownie that combines all the best elements of a malted chocolate shake.

Instructions

  1. Get your oven and pan ready:
Preheat your oven to 350°F (180°C).
Line an 8x8-inch (20x20 cm) baking pan with aluminum foil and spray it with nonstick spray. Set it aside.

  2. Mix dry ingredients:
In a medium bowl, mix together the flour, malted milk powder, cocoa powder, and salt. Set this bowl aside for now.

  3. Melt the chocolate and butter:
Put the butter, chopped milk chocolate, and dark chocolate into a heat-safe bowl.
Place that bowl over a pot of gently simmering water (make sure the bottom of the bowl doesn’t touch the water).                                                   Stir now and then until everything is melted and smooth.

  4. Add sugars and eggs:
Take the bowl off the heat.
Whisk in the granulated sugar and brown sugar until well mixed.
Then whisk in the eggs and vanilla.

  5. Combine everything:
Add the dry ingredients to the chocolate mixture.
Use a rubber spatula or wooden spoon to gently stir until everything is just combined. Don’t overmix.

  6. Bake the brownies:
Pour the batter into your prepared pan.
Bake for 25 to 30 minutes, until the center looks just set (not jiggly).

  7. Make the chocolate ganache (frosting):
Put the chopped chocolate in a heat-safe bowl.
Heat the cream in a small pot over medium heat until it starts to gently simmer—don’t let it boil.
Pour the hot cream over the chocolate and let it sit for 2 to 3 minutes.
Then slowly stir until the chocolate melts and everything is smooth.

  8. Cool and top the brownies:
    Let the brownies cool completely.
Then spread the ganache on top. If you like, sprinkle with flaky sea salt.

  9. Store leftovers:
Cover and keep any leftover brownies in an airtight container at room temperature for 3 to 4 days.

What are Malted Chocolate Brownies?

Malted Chocolate Brownies are a rich, indulgent dessert that combines the classic flavor of chocolate brownies with the sweet, slightly nutty taste of malted milk powder. The malted milk powder adds a unique depth to the chocolate flavor, creating a moist and fudgy brownie that is perfect for chocolate lovers. These brownies are a great variation on traditional chocolate brownies, giving them a more complex, satisfying flavor.

How do I make Malted Chocolate Brownies from scratch?

To make Malted Chocolate Brownies, you will need basic brownie ingredients like all-purpose flour, unsweetened cocoa powder, and butter, along with the key ingredient—malted milk powder. The malted milk powder enhances the flavor, giving the brownies a delicious malted taste. Follow the recipe instructions to melt the butter and chocolates, mix in the sugars, eggs, and vanilla extract, then combine with the dry ingredients to bake at 350°F (175°C) for about 25-30 minutes.

Can I substitute the malted milk powder in Malted Chocolate Brownies?

Yes, you can substitute malted milk powder in Malted Chocolate Brownies if you prefer. For a similar taste, try using non-dairy milk powder or a combination of powdered sugar and a small amount of vanilla extract. Keep in mind that the malted flavor will be different, but it can still result in a delicious brownie. For a gluten-free version, you can also use gluten-free flour.

Why is malted milk powder used in Malted Chocolate Brownies?

Malted milk powder is used in Malted Chocolate Brownies to provide a rich, malty flavor that complements the chocolate. It enhances the texture and flavor profile of the brownies, giving them a distinct, almost caramel-like depth. This ingredient is commonly used in desserts like milkshakes and candy bars, but it works wonderfully in brownies too, making them even more indulgent.

Can I make Malted Chocolate Brownies ahead of time?

Yes, Malted Chocolate Brownies can easily be made ahead of time. After baking, allow them to cool completely before storing them in an airtight container. You can keep them at room temperature for up to 3 days or store them in the refrigerator for up to a week. For longer storage, freeze the brownies for up to 3 months. Simply thaw at room temperature before serving.

How can I make Malted Chocolate Brownies extra fudgy?

To make your Malted Chocolate Brownies extra fudgy, try the following tips:

  • Use more butter for a richer, denser texture.
  • Avoid overbaking them; a slightly underbaked center will help achieve that fudgy texture.
  • Use high-quality chocolate with a higher cocoa content for an intense chocolate flavor.
  • Consider adding an extra egg yolk for a creamier texture.
These simple adjustments will make your Malted Chocolate Brownies extra indulgent.

How long should Malted Chocolate Brownies cool before cutting?

Allow your Malted Chocolate Brownies to cool for at least 30 minutes before cutting. This will help them set and prevent them from falling apart. If you're in a hurry, you can refrigerate them for about 15 minutes for quicker cooling. However, for the best texture and flavor, letting them cool to room temperature is ideal.

Can I add other mix-ins to Malted Chocolate Brownies?

Absolutely! You can customize your Malted Chocolate Brownies by adding a variety of mix-ins. Consider adding chocolate chips, crushed graham crackers (to enhance the "s'mores" flavor), chopped nuts like walnuts or pecans, or even marshmallows for a gooey, toasted effect. Just make sure to fold them into the batter gently before baking, so the mix-ins are evenly distributed.

What type of chocolate should I use in Malted Chocolate Brownies?

For the best results in Malted Chocolate Brownies, use a combination of high-quality milk chocolate and dark chocolate. Milk chocolate adds a creamy sweetness, while dark chocolate provides a rich, intense cocoa flavor. Aim for a dark chocolate with around 60-70% cocoa content for a balanced taste. The combination of these two types of chocolate will elevate the flavor profile of your brownies.
